With the days starting to feel like summer this has been a new favorite that I have made the last couple of weeks. Its been nice because I have been making it during my son's afternoon nap and then it can chill in the fridge until dinner time.
I mix together:
1/2 head of chopped lettuce
2 chicken breasts cooked and cubed
1/4c miracle whip (or mayonnaise)
4 slices of bacon chopped
pepper to taste
I then let it get cold in the fridge until dinnertime. I put the filling in pita's and we enjoy. This makes enough for 3 whole pitas with a generous amount of filling.
